At Iron Hub, our commitment to craftsmanship extends beyond the vineyard and into the art of distillation. Led by founding winemaker and master distiller Tom Jones, alongside winemaker Spencer Jones, Iron Hub Spirits reflects the same grape-to-glass philosophy that defines our wines—thoughtful, hands-on, and rooted in quality from the very beginning.

Each spirit begins with our premium wine and is carefully distilled, resulting in small-lot releases that showcase both precision and character.

We’re proud to introduce our first release of Iron Hub Vodka—a refined, small-lot spirit crafted from our premium estate-grown wines, including Sauvignon Blanc, Sémillon, and Barbera.

Tom Jones took an uncompromising approach to its creation. Using a tall continuous still, he made precise, continuous cuts—carefully removing both the heads and tails—to retain only the purest heart of the spirit. The vodka was then refined in a second distillation to achieve ideal proof and exceptional purity, without the need for filtration.

• Appearance: Polished, crystal clear
• Aroma: Subtle tropical fruit with delicate floral notes
• Palate: Exceptionally smooth with a hint of natural sweetness, soft fruit expression, and a creamy, velvety texture

Produced in a limited boutique run of just 714 hand-numbered bottles, this inaugural release is a true collector’s offering.

Handcrafted Tradition, Reimagined

Our brandy is where tradition meets innovation. Crafted primarily from our estate-bottled Sémillon, this spirit reflects both the heritage of classic wine regions and Tom Jones’ decades of distilling experience.

Using a custom continuous still, Tom carefully separates the heads and tails, capturing only the heart of the spirit. This precise process creates remarkable smoothness and depth. The brandy is then aged for approximately four years in French oak wine barrels, developing its rich character over time.

Tasting Notes

• Aroma: Apricot, vanilla, and caramel
• Palate: Velvety and layered with notes of apricot and butterscotch
• Finish: Long, smooth, and lingering

The result is a deeply expressive spirit with warmth, complexity, and a refined texture—perfect for slow sipping.

Inspired by years spent in the Sierra high country, this brandy was born from a simple ritual: enjoying a glass by the campfire. Today, it carries that same sense of place, craftsmanship, and quiet enjoyment.
