Filet Mignon with Wild Mushroom Sauce and Petite Sirah

  • 2-10oz Filet Mignon
  • 1 ½ cups Iron Hub Petite Sirah
  • 2-cloves garlic, minced
  • 1 clove shallots, minced
  • ½ yellow onion, sliced
  • 2 T. butter
  • 1 T. flour
  • 8 oz Wild Mushrooms (or what’s available), sliced
  • 3 oz Gorgonzola cheese, crumbled


Sauté onion, shallots, and garlic with olive oil. In a separate pan, melt butter then add flour. Fluff with a fork, this is your roux. Add onion, garlic, and shallots to roux, and stir. Add wine and mushrooms, and bring to a boil.  Reduce heat, and simmer for 10 mins. BBQ Filets to desired temperature (medium rare recommended). Pour mushroom sauce over steaks. Top with Gorgonzola.

Note: Roux is a mixture of flour and fat cooked together and used to thicken sauces.
