Ingredients
- 2-10oz Filet Mignon
- 1 ½ cups Iron Hub Petite Sirah
- 2-cloves garlic, minced
- 1 clove shallots, minced
- ½ yellow onion, sliced
- 2 T. butter
- 1 T. flour
- 8 oz Wild Mushrooms (or what’s available), sliced
- 3 oz Gorgonzola cheese, crumbled
Preparations
Sauté onion, shallots and garlic with olive oil. In a separate pan, melt butter then add flour. Fluff with fork, this is your roux. Add onion, garlic and shallots to roux, stir. Add wine and mushrooms, bring to a boil. Reduce heat, simmer for 10 mins. BBQ Filet’s to desired temperature (medium rare recommended). Pour mushroom sauce over steaks. Top with Gorgonzola.
