In a recent video, founding winemaker and master distiller Tom Jones reflects on something meaningful: watching his son, Spencer, step fully into the craft.
“It’s a wonderful, wonderful opportunity,” Tom shares. “Spencer has picked it up so quickly, and he’s so adept at it. It’s really been fun to see.”
For Tom, this journey has never been just about making wine or distilling spirits—it’s been about building something lasting. Over the years, that has meant long days in the vineyard, careful decisions in the cellar, and an unwavering commitment to quality. Today, it also means witnessing the next generation bring fresh energy and instinct to the work.
“It was just like he was a natural,” Tom says.
Spencer’s role at Iron Hub has grown organically, from earning a Bachelor of Science in Geology from the University of Oregon to a Master of Science in Viticulture & Enology from the University of California, and from learning the rhythms of the vineyard to leading winemaking decisions and sharing updates directly with guests and members. His hands-on approach reflects both respect for tradition and a forward-looking vision—an evolution that keeps Iron Hub dynamic while remaining true to its roots.
“It’s a real joy to be able to see all our work pass on to our only son,” Tom adds.
